Blind Pig Bistro at Eastlake Teriyaki - Seattle, WA

I wrote about Blind Pig Bistro a couple years ago (look at how far husband's photography skills have come!), and co-owner, Rene Gutierrez, recently opened an experimental sandwich shop next door in the old Eastlake Teriyaki building called Blind Pig Bistro at Eastlake Teriyaki. Paying homage to the 25-year-old structure, Rene kept the name and vibe of the vintage teriyaki joint. However, he did vamp it up by making incredibly flavorful food with fresh and local ingredients.

Grilled corn with cotija cheese and cayenne. I'm obsessed.

Curried beets with toasted walnuts.

Falafel sandwich and pork belly cemita (similar to a torta but with the distinct sesame seed bread).

The menu changes frequently, so we plan to go often! Next time, we want to try the fried fish and pulled pork sandwiches. Rene also mentioned he'll tweet about the *secret* pork belly banh mi sandwich pop-up, so subscribe to their Twitter. (Oops not so secret anymore!)
